We’ve tried the juice cleanse, hot yoga and gua sha stones. All of these practices are amazing, but take ritual and routine — a luxury in itself to have, but in all honesty hard to maintain with a busy schedule. While juggling work, friends, self care and the other 100 tasks that come up in a day, we need a quick fix for energy, glowing skin and a sufficient meal between Zoom meetings. Naturally, we began to ask ourselves “ what can I quickly do while multitasking, that also gives maximum benefits?”
Answer: eating super foods that create a glow from the inside out. This concept was once thought of as an old wives tale, but has never had more validity to it than now. Coconut, Lime and Supergreens
- ½ medium avocado, flesh scooped out
- ¾ frozen banana, coarsely chopped
- ⅓ cup (80mL) coconut milk
- ⅓ cup (80mL) coconut water
- 2 handfuls baby spinach leaves
- 1 lime, zest finely grated
- 2 tablespoons fresh lime juice
- Topping Options:
- White dragon fruits, sliced
- Pomegranate seeds
- Coconut flakes
- Chopped mixed nuts
- Finely sliced lime zest
Combine all ingredients in a high-speed blender and blend until smooth.
Pour smoothie into a shallow bowl. Decorate with topping, as desired.
